Carlton is a variety of komatsuna, also known as Japanese or Asian spinach, grown for its tender, nutritious leaves. The flavor is mild and versatile—somewhere between spinach and bok choy—with a slight mustardy bite that becomes sweeter when cooked. It’s excellent eaten raw in salads when young, or stir-fried, sautéed, or added to soups as the leaves mature. Since traditional spinach is very hard to grow here in South Florida we like to suggest people grow this plants instead, we promise you will barely notice the difference in the kitchen. Carlton grows best in the cooler months of fall through spring, since extreme summer heat can cause it to bolt. Plant in full sun to partial shade with rich, well-drained soil, and keep it evenly watered for the most tender leaves. It’s a fast grower and very productive; you can start harvesting baby leaves in just a few weeks. For a longer harvest window, pick outer leaves as needed rather than pulling the whole plant. Komatsuna is packed with vitamins and minerals, especially calcium and vitamin C, making it as healthy as it is tasty.
